Comedy Face Masks

 

Caramelized Winter Squash Slices
with Tunisian Spices

Makes 4 servings

TUNISIAN SPICE MIX

  • 1 teaspoon ground coriander
  • 1 teaspoon sweet paprika
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon caraway seed
  • 1/2 teaspoon sugar
  • Pinch cayenne pepper
  • 3/4 teaspoon salt

SQUASH

  • 1 winter squash, about 2 1/2 pounds, such as kabocha or butternut
  • 1 tablespoon extra-virgin olive oil

Preheat the oven to 400 degrees. To make the spice mix, in a small bowl, combine the coriander, paprika, cumin, caraway seed, sugar, cayenne and salt; set aside.

Cut the squash in half and scoop out the seeds; cut each half into six (2-inch-thick) slices. Brush the flesh with olive oil and sprinkle with 4 teaspoons of the spice mix. Arrange cut side down on a heavy baking sheet. Bake about 30 minutes, turning once, until the squash is tender and golden.
