Spicy Candied Walnuts

Makes about 1 cup

  • 1/4 cup confectioner's sugar
  • 1/8 teaspoon cayenne pepper
  • 1/2 teaspoon salt, plus more to taste
  • 2 heaping cups walnut halves and pieces (about 4 ounces)

Preheat the oven to 350 degrees. In a medium bowl, mix the sugar, cayenne and salt.

Bring a small saucepan of water to a boil. Add the walnuts and blanch them for 3 minutes. Drain the walnuts well and immediately roll them in the sugar mixture until they are thoroughly coated. The sugar will melt slightly.

Transfer the walnuts to a baking sheet or pan and bake, stirring occasionally, until they are a deep golden brown, about 15 to 20 minutes. Watch carefully; the sugar can burn easily. Let the walnuts cool completely before serving.
