Smoked Turkey Consommé With Mushrooms

The following Smoked Turkey Consommé is one of my favorite low-calorie dishes. It is a warming and filling dish, yet has only about 50 calories a serving.

When I created the consommé, I never intended it as a diet dish. To open a multi-course dinner, I often like to feature a light soup so that diners won't be stuffed before getting to the main course. The recipe is equally delicious as diet fare or as an opener for a grand feast.

Smoked Turkey Consommé With Mushrooms

Makes 10 cups

  • 2 smoked turkey wings or legs
  • 1 large onion, coarsely chopped
  • 1 whole bulb garlic
  • 2 carrots, coarsely chopped
  • 1 rib celery
  • 1 sprig fresh parsley
  • 2 bay leaves
  • 8 cups water, plus additional water
  • 4 cups sliced fresh mushrooms
  • 1/2 cup chopped dried mushrooms
  • 1 cup dry sherry, marsala or madeira
  • 2 tablespoons low-sodium soy sauce

Combine the turkey wings or legs, onion, garlic, carrots, celery, parsley, bay leaves and water in a large pot and simmer for 2 1/2 hours, uncovered. Periodically add more water, enough to keep the vegetables covered.

Remove broth from heat and strain, discarding all of the vegetables. Remove the meat from the bones. Skim the fat from the broth. Add enough water to the broth to yield 7 cups liquid. Return the meat to the broth. Add the fresh and dried mushrooms, sherry and soy sauce. Simmer at low heat for 40 minutes. Serve immediately or reheat for later use.
