Tortilla Soup With Beer

Makes 8 cups

  • 1 cup finely chopped red onion
  • 3 cloves garlic, finely minced
  • 1 teaspoon dry oregano
  • 1 cup dark beer
  • 5 cups defatted, unsalted chicken broth
  • 2 tablespoons low-sodium soy sauce
  • 1 whole boneless chicken breast, skin and fat removed
  • 1/2 cup finely chopped red bell pepper
  • 1/2 cup finely chopped green bell pepper
  • 1 tablespoon (or more) minced fresh jalapeño pepper
  • 6 dry or baked tortillas, cut in small triangles
  • 2 large tomatoes, diced
  • 1 cup fresh cilantro leaves
  • 8 wedges fresh lime

In a covered soup pot, place the red onion, garlic, oregano and beer, and simmer for 8 minutes. Add the broth and soy sauce and bring to a boil.

Meanwhile, dice chicken into small cubes. Reduce heat and add chicken to pot. Simmer on low heat for 10 minutes. Add bell peppers, jalapeño and tortillas, and simmer 5 minutes. Add the tomatoes and heat through.

Pour soup into bowls and sprinkle with cilantro. Serve with a lime wedge on the side.
