Comedy Face Masks

 

Turkey Citrus Avocado Salad

4 servings

  • 8 ounces field greens salad blend
  • 2 tablespoons chopped cilantro
  • 1 orange, peeled, sectioned, halved
  • 1 avocado, peeled, sliced
  • 1/4 red onion, cut into thin wedges
  • 1 1/2 cups cubed cooked turkey
  • 1/4 cup pumpkin seed kernels (pepitas)

DRESSING

  • 1/2 cup fresh orange juice
  • 2 tablespoons canola oil
  • 1 tablespoon spicy brown mustard
  • 1/4 teaspoon salt
  • 1/8 teaspoon ground red pepper

For the dressing: Beat the orange juice, oil, mustard, salt and red pepper in small bowl until well blended. Set the dressing aside.

For the salad: Place the lettuce in a serving bowl or on a large serving platter. Top the lettuce with cilantro, orange, avocado, red onion and turkey. Drizzle with salad dressing. Top the salad with the pumpkin seed kernels, if desired.
