Comedy Face Masks

 

Spinach Salad

6 servings

SALAD

  • 10 ounces fresh spinach, washed, cut up
  • 1/2 red onion, sliced into rings
  • 8 ounces fresh mushrooms, sliced
  • 1 avocado, sliced
  • Shredded cheese
  • Bacon, cooked crisp and crumbled

DRESSING

  • 1/2 cup oil
  • 1/3 cup sugar
  • 1 teaspoon salt
  • 2 tablespoons onion, grated
  • 1/2 cup ketchup
  • 1 teaspoon Worcestershire sauce
  • 1/3 cup vinegar
  • 1/2 teaspoon dry mustard
  • 1/4 teaspoon black pepper

Combine all of the salad ingredients in a large bowl. In a small bowl, mix the dressing ingredients. Pour enough dressing over the salad to moisten; toss to coat salad with dressing.

Per serving: 392 calories, 31 g fat, 20 mg cholesterol, 777 mg sodium, 23 g carbohydrates, 8 g protein, 2 g fiber.

For a 'Lite' version, I have replaced the oil in the salad dressing with a thickener in the form of cornstarch. I think the two dressings are almost identical.

The flavors in this sweet-and-sour dressing make it a really good way to get kids to eat vegetables. I left out the avocado, since the salad is delicious without it, and it adds 5 grams of fat per serving for each avocado.
