Smoked Oyster Spread With Crackers

Makes about 1 1/4 cups

  • 1 tin (3.75 ounces) smoked oysters
  • 1 package (8 ounces) Neufchatel or fat-free or regular cream cheese, at room temperature (see note)
  • 1/4 cup grated parmesan cheese
  • 1 teaspoon Worcestershire sauce
  • Paprika, for garnish
  • Assorted crackers, for serving

Drain oysters well and pat them dry with paper towels. Place in a food processor and process just until minced, about 10 seconds. Add cream cheese, parmesan and Worcestershire sauce. Process until well blended. Place in a bowl and sprinkle with paprika. Serve with crackers.

Note: You can pop the cream cheese, unwrapped and on a microwave-safe plate, in the microwave for 7 to 10 seconds to speed the process of bringing it to room temperature.

Start to finish: 10 minutes

Per tablespoon: 41 calories (69 percent from fat), 3 g fat (2 g saturated), 12 mg cholesterol, 2.5 g protein, less than 1 g carbohydrates, less than 1 g fiber, 85 mg sodium.
