Comedy Face Masks

 

Black Bean Chipotle Dip

6 servings

  • 2 tablespoons extra-virgin olive oil
  • 1 small yellow onion, chopped
  • 2 (15-ounce) cans black beans, drained and rinsed
  • 1 tablespoon chicken broth
  • 1 tablespoon white wine
  • 1 tablespoon chopped cilantro
  • 1 clove garlic, minced
  • 1 chipotle in adobo sauce, minced
  • Juice of 1 lime
  • 1/2 cup Jack cheese, shredded
  • Tortilla chips

Heat the oil in a skillet and sauté the onion over medium heat until soft. Stir in the black beans and mash with a potato masher. Add the chicken broth, wine, cilantro, garlic and chipotle, and simmer until heated through, about 3 to 5 minutes. Stir in the lime juice.

Place the bean mixture in a shallow bowl and sprinkle the cheese over the top. Serve warm with tortilla chips.
