Comedy Face Masks

 

Spanish Pork Kebabs

4 main-course servings or 8 appetizers

  • 1 1/4 pounds boneless pork

MARINADE

  • 1/4 cup fresh orange juice
  • 1 tablespoon olive oil
  • 2 tablespoons finely minced garlic
  • 1 tablespoon finely grated orange zest
  • 1 1/2 teaspoons ground coriander seed
  • 1 teaspoon ground cumin seed
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon sweet paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon crushed saffron
  • 1/4 teaspoon cayenne pepper

Trim fat from meat; cut meat in 1-inch cubes. For marinade, whisk together orange juice and oil in a large bowl. Whisk in remaining marinade ingredients. Add meat cubes to marinade and stir to coat. Cover and marinate overnight in refrigerator. Stir occasionally.

Thread the pork cubes on skewers. Cook on a charcoal grill or under a broiler. Allow about 6 to 9 minutes cooking time.
