Tea Tips

Here are some pointers from the Web site of Infusions of Tea in La Jolla for brewing a good cup of tea.

Start with cool, fresh water. Use the best quality water possible. Spring water is ideal; tap water, especially hard water with high mineral levels, should be avoided.

Use about 1 rounded teaspoon (about 2 grams) of tea per 6 ounces of water.

Use an infuser that allows the leaves to fully develop. Ball infusers may be used if there is enough room for the leaves to expand during brewing.

Each type of tea has a slightly different brewing method, but here are some guidelines: Brew white and green teas at 160 to 180 degrees, (water begins to steam slightly) for 1 to 3 minutes. Brew Oolong and black teas at 180 to 200 degrees (water begins to form bubbles) for 2 to 5 minutes.

Premium loose-leaf teas are good for multiple infusions. Some teas take on different flavors with each steeping.
