(Spicey) Cilantro Whiff

while this ain't no authentic Irish toddy, it certainly has enough greenery in the scenery to serve up on St. Paddy's Day this weekend.

Makes 1 cocktail

  • 2 to 3 sprigs cilantro
  • 2 to 3 sprigs mint
  • 2 slices lime
  • 4 tablespoons Malibu Rum
  • 3 tablespoons pineapple juice
  • 2 tablespoons simple syrup (see note)
  • Soda water
  • Lime slice, for garnish

Muddle the cilantro, mint and lime slices in a cocktail shaker. Fill shaker with ice. Add the rum, pineapple juice and simple syrup. Shake vigorously. Strain into a highball glass, add a splash of soda water, and garnish with lime slice.

Note: To make simple syrup, combine equal parts granulated sugar and water in a small saucepan set over medium heat and whisk frequently until sugar dissolves completely. Simmer for 4 minutes, remove from heat and cool. The syrup can be refrigerated for up to 3 weeks.
