Comedy Face Masks

 

Pumpkin Squares

Makes 12 servings

CRUST

  • 1 egg
  • 1 box yellow cake mix
    (reserve 1 cup for crust)
  • 1/2 cup melted butter

FILLING

  • 1 (30-ounce) can pumpkin-pie mix
  • 2 eggs
  • 6 ounces evaporated milk

TOPPING

  • 1 cup cake mix (reserved from crust)
  • 1 teaspoon cinnamon
  • 1/3 cup sugar
  • 1/4 cup margarine
  • 1/2 cup chopped walnuts or pecans

For the crust, grease and flour a 9-by-13-inch pan. Combine one egg, the cake mix and the melted butter in the pan and pat into place.

For the filling, in a bowl, whisk together the pumpkin pie filling, two eggs and evaporated milk. Pour over the crust.

For the topping, put reserved 1 cup of cake mix in a bowl and stir in the cinnamon, sugar and nuts. Cut the margarine into dry ingredients; sprinkle the topping over the filling. Bake at 350 degrees for 50 to 70 minutes. Garnish with whipped cream, if desired.

Per serving: 434 calories, 20 g fat, 72 mg cholesterol, 529 mg sodium, 59 g carbohydrates, 6 g protein, 3 g fiber.
