Mrs. Fisher's Sweet Potato Pie

8 servings

  • 2 cups cooked, mashed sweet potatoes or yams
  • 1 1/4 cups whole milk (room temperature)
  • 2 teaspoons melted butter
  • 1/4 teaspoon salt
  • 1/2 cup packed brown sugar
  • 1 tablespoon finely grated orange zest
  • 2 eggs, yolks and whites separated
  • 1 unbaked pie shell
  • 2 tablespoon minced candied ginger,

Preheat oven to 425 degrees. In a bowl, thoroughly mix sweet potatoes, milk, butter and salt. This works best if the sweet potatoes are warm but not hot. Stir brown sugar and orange zest into mixture. Beat in egg yolks.

In a separate bowl, beat egg whites until stiff. Gently fold whites into batter. Pour batter into unbaked pie shell. Bake at 425 degrees for 15 minutes. Reduce heat to 350 degrees and bake 50 minutes longer. Sprinkle with candied ginger. Cool completely before serving.
