Chocolate Mousse Cake

8 servings

  • 4 ounces unsweetened chocolate
  • 1/2 cup sugar
  • 1/4 cup cold water
  • 1 teaspoon vanilla extract
  • 1/2 pound unsalted butter
  • 1 cup powdered (confectioner's) sugar
  • 4 eggs, separated
  • 3 dozen ladyfingers

Place the chocolate, sugar and cold water in a saucepan and heat over low heat until chocolate is melted. Add the vanilla and set aside to cool.

In a bowl, combine the butter and confectioner's sugar, and add to the chocolate mixture. Beat in the 4 egg yolks. In another bowl, beat the egg whites until stiff peaks form. Fold the beaten egg whites into the chocolate mixture.

Line an 8-inch square pan with the ladyfingers on the bottom and sides. Pour the filling over the ladyfingers and place more ladyfingers on top. Refrigerate several hours.
