Comedy Face Masks

 

Apricot Squares

Makes 20 squares

  • 3/4 cup butter
  • 1 cup sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 2 cups plus 1 tablespoon flour
  • 1 1/3 cups flaked coconut
  • 1/2 cup chopped walnuts
  • 1/4 teaspoon salt
  • 1 (12-ounce) jar apricot preserves or jam

 

In the bowl of an electric mixer, cream together butter and sugar. Add egg and vanilla, and mix to combine. Stir in flour, coconut, walnuts and salt.

Press half of the dough firmly into a well-greased 8-or 9-inch square pan. Spread with apricot preserves. Crumble remaining dough on top and press down lightly. Bake at 350 degrees for 35 minutes. Cut into squares when cool.

Per serving: 230 calories, 11 g fat, 28 mg cholesterol, 108 mg sodium, 32 g carbohydrates, 3 g protein, 1 g fiber.

I lightened these substantially, and they still are moist and delicious. I used apricot spreadable fruit with no added sugar. These are delicious warm or cold.
