Garlicky Cranberry Chutney

Madhur Jaffrey's Garlicky Cranberry Chutney

Makes 2 cups

  • 1 (1-inch) cube fresh ginger, cut crosswise into thin slices, then into slivers
  • 3 cloves garlic, finely chopped
  • 1/2 cup apple cider vinegar
  • 4 tablespoons sugar
  • 1/8 teaspoon cayenne pepper
  • 1 can jellied cranberry sauce
  • Salt and pepper, to taste

 

Put the ginger, garlic, vinegar, sugar and cayenne pepper in a pan and simmer until the liquid has been reduced to 4 tablespoons, about 15 minutes. Add the cranberry sauce, salt and pepper, and simmer on low heat for 10 minutes. Cool and serve.
