Very Low Fat Strawberry Cheesecake Trifle

12 servings

  • 2 packages (8 ounces) fat-free cream cheese, softened
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar
  • 1 1/2 cups low-fat vanilla yogurt
  • 1 (8-ounce) carton fat-free whipped topping, thawed
  • 1 large angel-food cake, cut into 1-inch pieces
  • 1/4 cup sugar
  • 4 pints fresh strawberries, sliced

 

In a large mixing bowl, beat the softened cream cheese, vanilla and powdered sugar. Stir in yogurt, then fold in the whipped topping.

Add the cake cubes to the creamy mixture and toss lightly. Sprinkle 1/4 cup sugar over strawberries; stir gently.

Layer the cake mixture and the strawberries in a tall glass bowl (a trifle bowl), starting and ending with layers of strawberries.

Per serving: 258 calories, 1 g fat, 4 mg cholesterol, 490 mg sodium, 48 g carbohydrates, 8 g protein, 2 g fiber.
