Snowballs

Makes 60 to 70 cookies

• 1 pound unsalted butter
• 1 cup powdered sugar, plus more for coating cookies
• 4 1/2 cups unsifted all-purpose flour
• 1/2 teaspoon baking powder
• 1/2 teaspoon salt
• 2 cups chopped nuts
• 1 teaspoon vanilla extract

In the bowl of an electric mixer, cream butter and sugar together. Sift 3 cups of the flour with baking powder and salt and add to the butter mixture. Add remaining 11/2 cups flour to nuts and add to butter-flour mixture. Add vanilla extract and mix in.

Roll into balls the size of walnuts and place on baking sheets. Bake in a 300-degree preheated oven for 20 to 22 minutes. Immediately drop each cookie into a bowl of powdered sugar to coat it.
