Cheatin' Chicken Soup

Makes 2 servings

  • 1/2 cup microwaveable brown or long-grain rice (see note)
  • 1 tablespoon vegetable oil
  • 3 cloves garlic, minced
  • 1 onion, minced
  • 1 can (15 1/2 ounces) low-sodium chicken broth
  • 1 can (15 1/2 ounces) diced tomatoes
  • 1 to 2 cups cooked chicken (see note)
  • 1 cup corn, frozen or canned
  • 1/4 cup white wine
  • 1 tablespoon herbes de Provence or dried herb blend of your choice
  • 1/2 teaspoon red pepper flakes, or to taste
  • Freshly ground pepper

Cook the rice in the microwave according to package directions. Meanwhile, heat the oil in a large saucepan over medium-high heat; add the garlic and onion. Cook, stirring, until golden, about 5 minutes.

Add the broth, tomatoes, chicken, corn, the rice, wine, herbs, red pepper flakes and pepper to taste. Heat to a boil; lower heat and simmer 5 minutes.

Notes: Uncle Ben's Ready Rice, sold in a microwaveable pouch, takes 90 seconds. You will have leftover rice to use at a later date. Ready-to-eat chicken is available in supermarkets, or you can add raw diced chicken and lengthen the cooking time about 10 minutes.
