Comedy Face Masks

 

Chicken and Sausage Jambalaya

Makes 4 servings

  • 1 cup mixed precut onions, celery and bell peppers
  • 2 tablespoons vegetable oil
  • 2 bags (8.8 ounces each) precooked rice, such as Uncle Ben's Ready Rice, prepared according to instructions
  • 2 cans (14 1/2 ounces each) diced tomatoes with chiles
  • 1 package (6 ounces) grilled chicken breast strips or 1 piece (6 to 8 ounces) prepared rotisserie chicken, diced
  • 1 link cooked andouille, smoked sausage or kielbasa, about 8 ounces, sliced
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon salt
  • Freshly ground black pepper
  • Hot red pepper sauce

Stir together the mixed vegetables and oil in a 2-quart microwave-safe casserole dish; cover with plastic wrap, venting one corner. Microwave on high (100 percent) until softened, 2 minutes.

Stir in the rice, tomatoes, chicken, sausage, thyme, salt and black pepper to taste. Cover, venting one corner; microwave on high (100 percent) until heated through, 2 to 3 minutes. Serve with red pepper sauce at the table.

Per serving: 488 calories (40 percent from fat), 22 g fat (6 g saturated), 55 mg cholesterol, 50 g carbohydrates, 23 g protein, 1,965 mg sodium, 5 g fiber.
