Comedy Face Masks

 

Chunky Apple Cake (Reduced-fat)

Makes 12 servings

  • 3/4 cup liquid egg substitute or egg whites
  • 1 cup brown sugar
  • 3/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup applesauce
  • 1/3 cup canola oil
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons ground cinnamon
  • 3 cups apples, peeled and chopped

Preheat the oven to 350 degrees. Spray a bundt pan or a 9-by-13-inch pan with nonstick cooking spray. Dust with flour.

In a large bowl, beat the egg substitute with the sugars for 2 minutes. Add the vanilla, applesauce and canola oil, and beat to mix. In another bowl, sift together the flour, baking soda, baking powder, salt and cinnamon.

Mix all but 1/4 cup of the flour mixture into the egg mixture. Mix until all of the flour is moistened. Add the apples to the remaining flour in the bowl to coat lightly. Add the apples to the batter and mix together. Pour into the prepared pan and bake for 1 hour to 1 hour 15 minutes. The cake is done when a sharp knife inserted into the center comes out clean. If baking in a bundt pan, allow to cool for 15 minutes, then loosen edges with a knife and turn out onto a serving platter.

Per serving: 264 calories, 6 g fat, 0 mg cholesterol, 281 mg sodium, 48 g carbohydrates, 4 g protein, 2 g fiber.
