Comedy Face Masks

 

Smoked Chicken Quiche

Makes 6 servings

  • 1/4 cup diced yellow onion
  • 1/4 cup diced red bell pepper
  • 1/4 cup diced carrots
  • 1/2 cup dry sherry
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/8 teaspoon cayenne
  • 1/8 teaspoon nutmeg
  • 1/2 cup diced smoked chicken breast (about 2 ounces)
  • 1 1/4 cups 2 percent lowfat milk
  • 2 tablespoons cornstarch
  • 2 eggs
  • 2 egg whites
  • 1/2 cup grated smoked gouda cheese (about 2 ounces)
  • 1 pre-baked pie crust

Combine the onion, bell pepper, carrots, sherry, salt, pepper, cayenne and nutmeg in a skillet.

Cook at medium-high heat until liquid has nearly evaporated away. Remove from heat and stir in smoked chicken. Set aside to cool.

Whisk together the milk, cornstarch, whole eggs and egg whites, and mix well.

Evenly arrange vegetables and chicken in baked pie crust.

Pour milk mixture over the vegetable mixture.

Sprinkle with the cheese.

Bake in a preheated 350-degree oven for 45 minutes, or until a knife inserted comes out clean.

Let stand 10 minutes before slicing.

May be baked and reheated for later use.
