French Toast With Berry Mascarpone Cheese Filling

6 servings

  • 1 cup mascarpone cheese
  • 4 cups mixed berries (divided use)
  • 4 large eggs, beaten
  • 1/4 cup heavy cream
  • 2 teaspoons pure vanilla extract
  • 12 (1/2-thick) slices brioche bread
  • 4 tablespoons unsalted butter, or more as needed
  • Confectioners sugar, for dusting
  • Maple syrup for serving

For mascarpone filling: In a bowl, mix together the mascarpone and 2 cups of the berries.

For French toast: Preheat oven to 250 degrees. Line a baking sheet with parchment paper. In a shallow dish, beat eggs, cream and vanilla. Spread six slices of bread with mascarpone filling. Top with other six slices of bread to make sandwiches. Soak sandwiches in the egg mixture and transfer to the baking sheet.

Melt 2 tablespoons butter in a large skillet and cook three sandwiches over moderate heat for 2 to 3 minutes on each side, or until golden brown and crisp. Keep warm in oven while you toast remaining sandwiches, adding butter to skillet as necessary. To serve, top French toast with the additional berries. Dust with confectioners sugar and drizzle with maple syrup.
