Warm Buttermilk Cheese Biscuits

Easy cheesy biscuits for St. Paddy's Day

Chef Matt Gordon, who is doing a whiz-bang job at the stove of his new neighborhood eatery Urban Solace in North Park, CA, was generous enough to share his recipe for Warm Buttermilk Cheese Biscuits.

You can turn these comforting biscuits into a St. Patrick's Day treat by slapping some Irish butter on them when they emerge from the oven.

Warm Buttermilk Cheese Biscuits

Makes 1 1/2 to 2 dozen biscuits

  • 3 cups all-purpose flour
  • 2 1/4 teaspoons baking powder
  • 1 teaspoon kosher salt
  • 6 ounces (1 1/2 sticks) cold unsalted butter, cut into small cubes
  • 1 1/2 cups grated white cheddar cheese
  • 3/4 cup grated fontina cheese
  • 2 tablespoons minced chives
  • 1 1/4 cups plus 2 tablespoons buttermilk
  • 1 egg, lightly beaten

 

Preheat oven to 400 degrees. Sift flour, baking powder and salt into a large bowl. Add butter and grated cheeses and cut in with a pastry cutter or two knives until the butter is in pea-sized chunks. Mix in chives. Add the buttermilk and mix until just incorporated and the dough pulls together.

Turn dough onto a floured cutting board and pat down to about 1 inch thick. Cut with a sharp knife or biscuit cutter to desired size and shape. Brush tops with beaten egg and bake for 8 to 14 minutes, or until golden brown.
