Mongos' Mango Bread

Makes 2 loaves

  • 2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 2 teaspoons cinnamon
  • 3 eggs, well beaten
  • 3/4 cup canola oil
  • 1-1/2 cups granulated sugar
  • 2 cups peeled and diced fresh mango
  • 1/2 cup raisins
  • 1/2 cup macadamia nuts or walnuts, chopped
  • 1/2 cup grated coconut

Preheat oven to 350 degrees. Grease and flour two 9-by-5-inch loaf pans. Sift flour, baking soda, baking powder and cinnamon into a small bowl. In a large mixing bowl, combine eggs, oil and sugar. Combine dry and wet ingredients, and mix well. Fold in the mango, raisins, nuts and coconut.

Pour into loaf pans and bake for 45 to 60 minutes, or until bread is golden brown. To test, insert a toothpick in the center of the loaf. When it comes out clean, bread is done. Let loaves cool in pans for 10 to 15 minutes; then unmold and cool completely on racks.
